Ice-cream maker/machine



·         ~700g peeled and seeded cucumbers ·         200g granulated sugar
·         3 tbsps lemon juice  



  1. Peel cucumbers and remove the seeds. Cut into 2 inch pieces and place in a food processor along with lemon juice and sugar. Process until smooth.


  1. Transfer to an airtight container and let it chill in the fried until cold, ~1 hour


  1. Freeze the mixture in ice cream maker according to the unit’s instructions. Process until the mixture has reached a soft scoop consistency.


  1. Transfer to a freezer-safe container and let rest in the freezer for at least 4 hours before serving.


  1. Allow to sit at room temperature for 5 minutes before scooping and serving. Garnish with fresh mint.
