~ 4 servings as a side


·         1 large cucumber finely diced ·         2 tbsps of extra virgin olive oil
·         1 large tomato, finely diced (about equal amounts as the cucumber) ·         Juice of one lemon
·         ½ or ¼ red onion as preferred, finely chopped ·         6 pitted black olives (or to taste), finely chopped (optional)
·         1 tsp flaky salt, more to taste ·         Handful of flat-leaved parsley, finely chopped (optional)
·         Freshly ground pepper to taste  



  1. Finely dice the cucumber, tomato and onion and combine in a bowl. Beforehand, you can soak the onion in ice-cold water for half an hour to soften the onion flavour if desired.


  1. Add the finely chopped olives and parsley (optional)


  1. Add the lemon juice and olive oil, mix. Season with the salt and pepper to taste. Combine thoroughly.


  1. Leave at least an hour before serving for better flavour.


Serve with grilled or roasted meat or fish. Perfect to enjoy when dining alfresco on a warm summer evening!
